Happy Monday, peeps! I am SUPER excited to share this quinoa recipe I came up with last week….it was such a hit! And what’s even better, is that the left-overs are amazing, too!
Mexican Quinoa Casserole
Ingredients:
1 cup of quinoa
2 cups water
1 can whole corn
1 can rotel
1 can black beans
1-2 chicken breasts, cooked and chopped
1/2 cup shredded cheese
Directions:
Cook the quinoa and water as directed. In a casserole dish, mix the quinoa, beans, rotel and chicken. Sprinkle cheese on top. Bake at 350 for 20 minutes. Enjoy!

Like Crystal, the other commenter, I’ve never tried quinoa, either. Beans and cheese sounds super tasty right now (probably because I haven’t eaten them in way too long) so this sounds like an ideal recipe to try quinoa for a first-timer.
You definitely should try it! It’s just as easy to make as rice. 🙂
