Chocolate Peanut Butter Protein Muffins

Y’all, it’s Tuesday. Shouldn’t it be Friday? It’s so rainy here in the South…and rainy days make me sleepy and want to just read all day long. But, sometimes life doesn’t let you sit and read all day.

Another thing I like to do when it’s rainy is bake. I have a 5k coming up on Saturday, so I’m trying to eat healthy foods only. So, instead of making something that would tempt me, I made something that was good for me! Chocolate Peanut Butter Protein Muffins….without flour or sugar! I had my running buddy over and since she’s gluten free too, I had her try one. Let me just say, she wanted the recipe. Most gluten free desserts are flat and dense. These muffins are so fluffy and slightly sweet. So good!

Chocolate Peanut Butter Protein Muffins

Chocolate Peanut Butter Protein Muffins
2 ripe bananas
2 eggs
1 cup peanut butter
1/2 cup coco powder
2 scoops of chocolate or chocolate/peanut butter protein powder
1/3 cup honey
2 tbsp vanilla
1/2 tsp baking soda

Mix all the ingredients together. Bake at 400 for 12 minutes. Enjoy your healthy treat!

Blueberry Banana Muffins

In case you haven’t figured it out….we love muffins around here. Luke likes them because they’re more filling and have less sugar than cookies or other kinds of dessert. I like to make them because they’re quick, easy and not super messy! Today I want to share with you a recipe I made up with all our frozen blueberries. Blueberry Banana Muffins! Luke loved them, and I also took some to a family in the church. As far as I know….they liked them, too! 🙂

Blueberry Banana Muffins

1 3/4 cups all-purpose flour

1/2 cup sugar

2 1/2 tsp. baking powder

3/4 tsp. salt

1 well beaten egg

3/4 cup milk

1/3 cup oil (I like using coconut oil!)

1 cup mashed bananas

1/2 to 1 cup blueberries


Stir the first 4 ingredients until well combined, add the wet ingredients. Stir just until moistened. Fold in blueberries. Bake at 400 for 25-30 minutes.

Voila! Don’t those sound so good? We love them so much, I’ve made them twice this month!

Spiced Banana Muffins

Yum! Who doesn’t like banana muffins? Okay….I usually don’t. I’m not a banana fan. But, these muffins have a secret ingredient. It makes them so yummy and so healthy! Do you know why? Because the secret ingredient is Young Living Thieves Vitality oil! It is amazing at supporting your immune system. The oils that make up Thieves are clove, lemon, cinnamon bark, eucalyptus, and rosemary. Pretty amazing stuff, huh? How can you get a bottle of it? We’ll get to that…after the recipe! 🙂

Spiced Banana Muffins

3 Cups wheat flour

1 1/2 tsp baking soda

3/4 tsp salt

1/4 tsp nutmeg

1/2 tsp cinnamon

6 drops of Thieves Vitality oil

3 eggs

2 cups mashed bananas

1 cup sugar

6 tbsp oil

Mix the first 4 ingredients, then set aside. Beat the rest of the ingredients, then add the flour mixture. Mix well. Bake at 400 for 15-20 minutes. Makes about 2 dozen.

These are some of our FAVORITE muffins! Luke always asks me to make them, and they are my go-to breakfast when the bananas are starting to turn brown. They freeze super well, so make the big batch, then be able to eat them when you need them! I love doing that with muffins.

Peanut Butter Muffins

      Today I want to share with you one of my husband’s favorite muffin recipes. He loves for me to make him muffins to have at work or when he gets home. I made these the first time with chocolate chips and I loved them. I’m backing off eating gluten, so he asked me to make these for him without the chocolate. He loves them! I had a taste and thought they were pretty yummy, too!

Peanut Butter Muffins

2 1/4 Cups All-Purpose Flour
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
2/3 Cup Brown Sugar
6 Tablespoons Butter, melted and cooled
1/2 Cup Peanut Butter
2 Eggs
1 Cup Milk
In a large mixing bowl, whisk together the flour, baking powder, salt and brown sugar. In a medium mixing bowl, whisk together the butter, peanut butter, eggs, and milk until smooth. (if the peanut butter is in clumps within the liquid that is fine, it will all work out in the end) Pour liquid mixture into flour mixture and mix until just combined. Fold in chocolate chips. In a paper lined muffin tin, scoop 3 tablespoon size scoops into each muffin cup (I used my cookie scoop). Bake in a pre-heated 375 degree oven for 17-20 minutes or until a toothpick inserted in the center comes out clean.


     Don’t they sound heavenly? They’re quite filling, so they are perfect for a hearty snack! What are your favorite muffins?
