Blueberry Jam

This past Saturday, my husband decided we needed to have an on-a-whim family outing! We went to a local u-pick blueberry farm, since Little Man loves blueberries. Plus, there is SO much you can make with blueberries!

After we got home and I washed them all, I found a recipe that I could….sorta follow. šŸ˜‰ Since I don’t like following recipes to a T, I decided I’d share with you all this super simple, so easy, small-batch blueberry jam recipe!


4 cups blueberries
1/2-3/4 cup sugar (I erred on the side of less sugar)
6 drops Young Living’s Lemon Vitality oil (you could use about 2 tsp of lemon juice)
sprinkle of cinnamon (believe me, this helps make it!)

Mix all the ingredients on medium heat in saucepan, stirring continually. Continue stirring for 30 mins. Don’t stop stirring, or it will begin to stick and burn to the bottom. Yes, I understand not leaving the stove for 30 mins is difficult. It will be worth it. After 30 mins of cooking, pour into glass jar- my batch made 1qt and 1/2 cup of jam. Refrigerate until at least cool for it to firm and turn into jam consistency. Enjoy!

My men loved this on a batch of homemade zucchini bread and a batch of zucchini bread where I added blueberries to the top. Yum!

{Trim Healthy Mondays} Breakfasts

Hey there! We’re back for another Trim Healthy Monday! Today I want to share with you some of my favorite go-to breakfasts. Now you must know, before getting married, I never ate breakfast. Luke broke me of that by making me scrambled eggs with sausage and veggies (YUM!) every morning. Although that is one of my most regular breakfasts, I do try to mix it up some so that my body can burn different fuels, which helps revvs your metabolism up!

+ Chocolate Overnight Oatmeal with a Trimmy Light (E)
Did you know your body needs carbs? It does! So make sure you fuel your body with good carbs at least once a day. One of my favorite go-to “E-nergizing” breakfasts is my overnight oatmeal with a Trimmy Light (pg. 430, THM Cookbook) for added protein.
+ Egg white scramble with non-starchy veggies and 1-2 peices of sprouted toast (E)
This is another easy, super yummy and filling “E” breakfast!
+Ā Briana’s French Toast in a Bowl (S) is a yummy & filling “fat” breakfast that totally doesn’t feel healthy! I love this on a chilly morning or when I’m craving something sweet!


+Gwen’s Oven Dutch Pancake (S) is a great meal for make-ahead breakfasts or if you’re feeding a large family! Yum, yum!
+ Mock Chocolate Milkshake (FP)
You have to get some “fuel pull” breakfasts in sometimes, and this is a yummy one! Who can turn down a chocolate milkshake for breakfast? It’s all protein, and no fats & carbs. I love it after I’ve had an early morning workout!

{An intro to} Trim Healthy Mondays!

Happy Monday! Today I am starting a new series called Trim Healthy Mondays! If you follow along on Facebook or Instagram, you know I am a big Trim Healthy Mama fan. I’ve been doing THM exclusively for over a year now, and my husband and I feel great! There have been a few cheats here and there, but it’s a plan not a diet, so I just give myself some grace, and start back 3 hours later. šŸ™‚

Trim Healthy Mondays
I’ll do different things each Monday….I might share tips, a look at my day, recipes, my journey, ect. Of course if there’s something you want to know or see, just let me know!
I do want to just give some tips for starting out, and some good resources to get you started!
* If you haven’t already, read (buy, borrow from a friend, rent from the library) one of the plan books (either the original or the new one). The cookbook can come later. Everyone always thinks you have to have the cookbook to succeed. It’s not true! I started with the original book with picture-less recipes. It CAN be done without the cookbook. But, you HAVE to read the plan!
* Check out Gwen’s Nest starter guide. Print it out and memorize it. SUCH good info here!
*Start slow! I think that’s so many people’s main problem. They jump in head first without reading the book, get confused, frustrated and stop. Read the book and take it slow!
*Focus on real foods first! Don’t try making all the new recipes if you feel overwhelmed. Just make normal, regular meals with protein and either a carb or a fat. Starting off, this makes it a lot easier!
*Plug into the main Facebook group, and any off-shoots. Join the Trim Healthy Mama Facebook group, and the Beginner Group! They also have a Pregnancy & Nursing Group, and an Allergy-Friendly Group.

Apple slices sprinkled with cinnamon, andĀ a spoonful of peanut butter? Yes, please! So yummy and filling.


A handful of fruit is a wonderful pick-me-up for an afternoon slump or if you’re craving sweets. Yum!

A mixture of fruit and nuts are a perfect combo!


I never used to like avocados. Like, ever. But I seriously eat my weight in them (if I’m craving them). They’re also great to make guacamole and eat it with carrots. Yum!

Banana “Nut Medley” Muffins

Happy Monday! Yes, yes, another muffin recipe! What can I say? They’re quick and easy! Today I am sharing with you yet another Banana Muffin….this one has lots of different nuts in it. It was a huge success with Luke!

Banana Nut Medley Muffins

1 3/4 cups flour
1/2 cup sugar
2 1/2 tsp baking powder
3/4 tsp. salt
1 egg
3/4 cup milk
1/3 cup oil
1 cup banana
up to 1 1/2 cups of nuts- I used cashews, almonds, pecans and walnuts

Stir the first four ingredients together thoroughly. Add the wet ingredients at once to the dry mixture. Stir until just combined. Add nuts, stir gently. Bake at 400 for 25-30 mins. Makes approx. 12 muffins. Enjoy!

{Gluten-Free} Peanut Butter & Oat Energy Bites

Happy Monday, everyone! Yesterday was my 20’th birthday….I celebrated it on Friday & Saturday with Luke & friends, then spent the actual day at church and with family. It was good- I just can’t believe I’m 20 now.

Today I want to share with you a favorite recipe I’ve been making for years, but just made some since being married. They’re gluten-free, healthy and so yummy and filling! Luke definitely loves them!

Gluten-Free Peanut Butter And Oat Energy Bites

Peanut Butter & Oat Energy Bites

1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1/2 cup ground nuts (I used 1/2 pecans, 1/2 walnuts)
1/2 cup mini chocolate chips
1 tsp vanilla

Blend the nuts together to make a powder. Mix all the ingredients in a mixing bowl. Roll into balls and chill in the refrigerator on a plate. Let harden, then transfer to a seal-able container to keep up to two weeks in the fridge.

Energy Bites

This is a perfect healthy on-the-go snack, or a post-workout snack. So yummy and filling! I love having one with fruit. šŸ™‚
