Chocolate Strawberry Shake

Happy Tuesday! Today in the South is so.stinking.cold. Like, I hate it. All I want to do is stay under the covers and read. But, as a grown up, that really can’t happen.

Last week I put together a chocolate & strawberry protein shake and it is SO good. I want to share it with you today. It’s so easy to make!

Chocolate Strawberry Shake


Ingredients:
Chocolate protein powder
1-2 handfuls of strawberries
1 1/2 cups of milk

Directions:
Blend all together in a blender or bullet and enjoy!

How to have a {simple, tasteful & inexpensive} Wedding Reception

Happy Wednesday, all! I know I haven’t posted much….like, at all, but I hope that can change in the coming weeks! Today I want to share with you some tips, tricks and pictures from my simple (but, I think, gorgeous!) wedding reception.

Wdding Reception

First off, let me say that if you schedule your wedding when no one will expect a meal….no one will expect a meal. And that helps you out in the $$$ area quite a lot. Schedule your wedding around 1-3pm if possible. Too late for lunch, too early for supper.

We offered a little bit of a variety of things. We had fresh fruit, donuts, donut holes and scones. And, of course, cake!

Wedding Reception FoodMixing in different decorations in with the food also helps make it seem like there is more than there is. Mix in flowers, books, jars, lace, wood. Whatever fits your style. 🙂

We also used some hanging jars with flowers in them to give it an outdoorsy feel and help draw your attention upward, too.

I loved mixing textures of wood, lace, burlap, flowers and glass. It turned out quite lovely, if I do say so myself. 🙂

{Gluten Free} Fudge Brownies

Have you ever had a dessert that was just amazing and tasted like a normal brownie, but it was gluten-free? And it’s main ingredient was….black beans? Well, back a few years ago my good friend (and now sister-in-law!) shared her black bean brownie recipe with me. I am so thankful she did!

Fudge Brownies

You would never know these brownies had black beans in them….they’re fudgy, slightly sweet and definitely chocolatey! Even my gluten-loving husband likes these brownies! 🙂


Ingredients:
1/2 Teaspoon Baking Powder
3 Tablespoons Vegetable Oil
1/2 Cup Chocolate Chips
3 Eggs
3/4 Cup Sugar
1/2 Cup Unsweetened Cocoa Powder
1 1/2 Teaspoons Vanilla
2 Cups Canned Black Beans, Drained & Rinsed Well
Pinch of Salt

Instructions:
Preheat oven to 350˚F and spray a 8×8 inch baking dish with cooking spray. Process black beans in a food processor until smooth. Add eggs, oil, cocoa, sugar, salt, vanilla and baking powder. Process again until very smooth. Add 1/2 cup of chocolate chips and pulse just a few times. Pour batter into the baking dish and top with remaining 1/2 cup chocolate chips. Bake for 30 minutes, or until a toothpick comes out clean. Cool completely, and then cut and serve. These are wonderful with vanilla ice cream!

Wedding Wednesday // Cakes

Today I want to share with you the cakes. Thanks to Pinterest, I knew exactly what I wanted my cake to look like…and I got exactly what I wanted! It was perfect.

I wanted it to be very simple, but with some texture to it. I took three pictures to the lady who did my wedding cake, and she definitely made my dream cake!

Cutting the cake was a bit of an adventure. We didn’t quite know what to do, but one of my good friends came and rescued us. Ha!

Now, we didn’t know what to do about Luke’s groom’s cake. We hopped from one idea to another one, until this one came to mind. The outside would look just like mine, only chocolate, but the inside…well, the inside would be a surprise.

{Gluten-Free} Peanut Butter & Oat Energy Bites

Happy Monday, everyone! Yesterday was my 20’th birthday….I celebrated it on Friday & Saturday with Luke & friends, then spent the actual day at church and with family. It was good- I just can’t believe I’m 20 now.

Today I want to share with you a favorite recipe I’ve been making for years, but just made some since being married. They’re gluten-free, healthy and so yummy and filling! Luke definitely loves them!

Gluten-Free Peanut Butter And Oat Energy Bites

Peanut Butter & Oat Energy Bites

Ingredients-
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1/2 cup ground nuts (I used 1/2 pecans, 1/2 walnuts)
1/2 cup mini chocolate chips
1 tsp vanilla

Directions-
Blend the nuts together to make a powder. Mix all the ingredients in a mixing bowl. Roll into balls and chill in the refrigerator on a plate. Let harden, then transfer to a seal-able container to keep up to two weeks in the fridge.


Energy Bites

This is a perfect healthy on-the-go snack, or a post-workout snack. So yummy and filling! I love having one with fruit. 🙂

Chocolate Chip Banana Muffins

Hey y’all! Happy Wednesday and happy New Year’s Eve! Today I want to share with you one of Luke’s all-time favorite recipes. We’re big muffin fans because they are quick & easy to make, yummy and super filling. It’s a plus that they’re easy to travel with, too…great for on the go snacking!

We’re not big banana eaters- but I love baking with them! I usually get my bananas at Aldi when they offer a huge sale on organic bananas for about $.40 a pound. Who could pass that up?!? Thanks to the sales we have these muffins  about every couple weeks.

Banana Chocolate Chip MuffinsThese muffins are to die for! Check out my recipe over at Domestically Speaking! These muffins rise quite a bit so they are nice and fluffy. I think this recipe is the perfect combo of chocolate and banana in muffin form. 🙂 Some of our other favorite banana recipes are Blueberry Banana Muffins, Chocolate Banana Bread, and Spiced Banana Muffins.
