{Trim Healthy Mondays} Breakfasts

Hey there! We’re back for another Trim Healthy Monday! Today I want to share with you some of my favorite go-to breakfasts. Now you must know, before getting married, I never ate breakfast. Luke broke me of that by making me scrambled eggs with sausage and veggies (YUM!) every morning. Although that is one of my most regular breakfasts, I do try to mix it up some so that my body can burn different fuels, which helps revvs your metabolism up!

+ Chocolate Overnight Oatmeal with a Trimmy Light (E)
Did you know your body needs carbs? It does! So make sure you fuel your body with good carbs at least once a day. One of my favorite go-to “E-nergizing” breakfasts is my overnight oatmeal with a Trimmy Light (pg. 430, THM Cookbook) for added protein.
+ Egg white scramble with non-starchy veggies and 1-2 peices of sprouted toast (E)
This is another easy, super yummy and filling “E” breakfast!
Briana’s French Toast in a Bowl (S) is a yummy & filling “fat” breakfast that totally doesn’t feel healthy! I love this on a chilly morning or when I’m craving something sweet!

 

+Gwen’s Oven Dutch Pancake (S) is a great meal for make-ahead breakfasts or if you’re feeding a large family! Yum, yum!
+ Mock Chocolate Milkshake (FP)
You have to get some “fuel pull” breakfasts in sometimes, and this is a yummy one! Who can turn down a chocolate milkshake for breakfast? It’s all protein, and no fats & carbs. I love it after I’ve had an early morning workout!

Old Fashioned Zucchini Bread

Happy Tuesday, everyone! I am so excited to share with you a new recipe that my sweet husband loves. It’s so quick and easy to make- plus, it freezes well!

Old Fashioned Blueberry Bread

Ingredients-
2 eggs
1/3 cup honey
1 cup buttermilk
2 cups flour
1 tsp. salt
1/2 tsp baking soda
1 cup fresh or frozen blueberries

Directions-
Whisk eggs and milk together. In separate bowl, blend dry ingredients . Add liquid mix to dry ingredients until just moistened Fold in blueberry. Fill greased bread pans and bake for 30-45 mins at 375. Enjoy!

Fluffy Breakfast Biscuits

Would you like to know a secret? I’ve been scared to death to make biscuits. My poor husband has asked me to make them since we got home from our honeymoon, but I always came up with an excuse why I couldn’t. I then tried my hand at a recipe that someone gave me, and they just didn’t rise. What’s the point to taking the time to make biscuits that don’t rise? So I never made them.

Quick And Easy Fluffly Breakfast Biscuits

Until last week. Oh. My. Word. Y’all….these are amazing!! They rose so high. They’re fluffy, flaky, and just perfect! Then, on Sunday, Luke made homemade gravy to go with them….to die for!

Want to know how to make them? Here’s the recipe!


Ingredients:
2 1/4 cups of self-rising flour
1/2 cup (1 stick) of butter
1 1/4 cups of buttermilk
All-purpose flour for dusting & kneading

Directions:
Place flour in a large bowl and cut in butter until crumbly. Cover and place in the fridge for 10 minutes.
Preheat oven to 425.
Slowly mix in buttermilk until moisened.
Turn the dough out onto a floured surface and kneed 3-4 times, or until smooth, adding flour as needed. Pat the dough out to 3/4 in thick and cut out biscuits with a mason jar top (or anything big and round. 🙂 ).
Place biscuits on greased baking sheet with sides touching. Bake for 14-17 minutes, until lightly browned.
Enjoy! They taste so good with honey, jelly, butter or homemade gravy. 🙂

Chocolate Chip Banana Muffins

Hey y’all! Happy Wednesday and happy New Year’s Eve! Today I want to share with you one of Luke’s all-time favorite recipes. We’re big muffin fans because they are quick & easy to make, yummy and super filling. It’s a plus that they’re easy to travel with, too…great for on the go snacking!

We’re not big banana eaters- but I love baking with them! I usually get my bananas at Aldi when they offer a huge sale on organic bananas for about $.40 a pound. Who could pass that up?!? Thanks to the sales we have these muffins  about every couple weeks.

Banana Chocolate Chip MuffinsThese muffins are to die for! Check out my recipe over at Domestically Speaking! These muffins rise quite a bit so they are nice and fluffy. I think this recipe is the perfect combo of chocolate and banana in muffin form. 🙂 Some of our other favorite banana recipes are Blueberry Banana Muffins, Chocolate Banana Bread, and Spiced Banana Muffins.

Chocolate PB Protein Shake

Happy Monday, everyone! Who enjoyed their weekend? I know I did! Luke and I did a lot of fun Christmas-y things this past weekend. Friday night we went to a local Christmas parade, and Saturday we watched a Christmas movie and got our first real Christmas tree. So much fun!

Today I want to share with you one of my favorite protein drinks! I made this up one day and fell in love with it. I make it at least once a week now!

Chocolate PB Protein Shake


Ingredients:
1 1/2 scoops protein powder (mine is chocolate PB)
1/4 cup ground oats
2 tbsp pb2
1/2- 1 cup milk
2 tbsp vanilla yogurt
1 ripe banana
coconut for garnish

Directions:
Blend all except coconut in the blender until desired consistancy. Top with coconut. Enjoy!


This is great for after a workout, an afternoon pick-me-up or a yummy breakfast!

Oatmeal Breakfast Bread

Happy {cold!} Monday! Who else is getting cold out there in this freezing weather?? It been barely above 40 here in the South….we were not prepared for that! Because of this weather, I’ve been inside more doing DIY projects, organizing the house, and baking, of course! So today I would like to share with you a new recipe…Oatmeal Breakfast Bread.

Oatmeal Breakfast Bread

Let me just say….this is not a sweet bread. It’s not suppose to be. It’s just regular ‘ol bread. But it’s great with preserves, jam, honey or peanut butter on it!


Ingredients:
1 cup quick oats
1 1/2 cups water
1 3/4 cup flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup butter, softened
2 cups sweetened applesauce (I used 1 cup homemade, 1 cup store-bought)
2 eggs
1 tsp. vanilla

Directions:
Place water in pot and bring to a boil. Place oats in a small heat proof bowl. Pour boiling water on top. Set aside. Combine the flour, soda, salt and cinnamon in mixing bowl. Mix well. Add butter, eggs, applesauce and vanilla. Mix well. Slowly stir in oatmeal. Bake at 350 for about an hour. Enjoy!
