Lemon Blueberry Muffins

Today I want to share with you a muffin recipe I whip up if I want to make Luke really happy. It combines two of his favorite things….lemon and blueberries! Plus, it’s perfect for Spring (or to have for an Easter Brunch!) and they are so pretty!

Plus, I add a little secret ingredient to it….Lemon oil! But what’s so cool is that Young Living came out with the Vitality line, which means it’s FDA approved to use internally! Yayyyy!!

Lemon Vitality

So, without further ado, here’s the recipe….


Ingredients:
1.5 cups flour
1/2 cup sugar
1 tbsp. baking powder
1/4 tsp. salt
1/3 cup oil
1/2 cup frozen blueberries (or fresh, I use frozen)
1 egg
1 cup milk (I used 1/2 goats milk and 1/2 almond milk)
10 drops of Lemon Vitality

Directions:
Mix by hand all together. Do not beat. Bake at 375 for 20-25 minutes. Enjoy the lemon-y goodness!
